If your just pulling the Diff out of the back of the box...

Then first you need to take the Bell Housing of the back of the box.

Then take the Drive Flanges off the side of the box. held on by circlips.

Then un screw the side carrier bearing housings and if there NOT modified to have the extra side carrirer bearing they should not be to hard to get out. (We have a tool we made out of 2 bits of angle and a piece of flat bar). Works great. If they have been modified the most common thing to do was to drill holes around the outside of the carrier to allow for something like a hole punch to fit in then undo it that way.

As soon as there out there shouldn't be anything else holding the diff in. But I must addmit thats the easy part... then you got to spin the box around and start from the other end...

I hope thats usefull info and I hope it makes some sort of sence.
I don't think I missed anything.

Yep. thats all there held on with. Glad could help.
You can never have to many gearbox bits....hahaha....
Thats the best idea. Just use the best of the 2 boxes.
I have always heard its a very good idea to keep Crown Wheel and Pinion a pair though.
But Im sure someone can either back me up on that or know otherwise...

Not trying to be rude but If you thought removing the diff was difficult, you are going to find that without special tools & knowledge you are not going to be able to get the rest apart/ stripped down & put back together properly. Remember that an incorrectly assembled (& wrongly internally adjusted) VW box will destroy whatever good gears you may put in.
